This is almost velvety in feel yet lifted throughout, with creamy waves of ripe orchard fruits giving way to savory herbal tones. It becomes spicy and leaves a salty flourish through the medium-length finale.

On the palate, soft, pliant textures give way to ripe orchard fruits with a slight mineral twang, while brisk acids perfectly frame its slightly opulent nature. The finish is medium in length, buzzing with energy and ending on a note of savory herbs. While there’s more richness here than you’d usually expect from Pecorino, this is really quite nice and perfectly in balance
